With so many visitors, crowds naturally funnel toward the places built to handle them. Those places matter, and many are well worth seeing. But a small neighborhood counter, an owner who remembers your order, a conversation that turns into an afternoon — these open up more easily with Japanese, everyday presence and local relationships.
I bring what I learn by living here: where I’ve been eating this month, who I know, and how to pace a day so it feels like Kyoto rather than a schedule.

I’m Spanish, spent twenty years in US technology, and then moved to Kyoto with my wife and our corgi, Yuki.
Here, life happens at street level. Eating out every day has turned into friendships with neighbors and with people who run places I return to. I hear what’s in season, and I still get surprised every week.
Hosting has always been my thing. For years I’ve organized retreats for family, friends and colleagues, simply because I love bringing people together. Kyoto Unfolding is the same instinct: a few private days, each planned personally around you, the season and the weather. No two are alike.

I’ve visited more than 700 businesses, restaurants and cafés in Kyoto. I live and eat out here every day, visiting at least five different places each week. Some familiar, some new. Your day draws on what I love, who I know, and what is good right now.

Start with a $50 planning deposit, credited toward your final price.
Plan your Kyoto dayChoose preferred dates, complete the form and pay a $50 deposit. I reply within 24 hours after both are complete, then send a tailored proposal. Your booking is confirmed after proposal acceptance, verified balance payment and date confirmation.
The $50 deposit is credited toward your final price. For a $500 Local Friend day, $450 remains. The deposit does not reserve dates.
The deposit is refundable until I start planning. If suitable dates cannot be arranged, I refund it in full even after planning starts. Confirmed bookings: 80% refund when canceled at least 24 hours before your trip starts.
First reply: 24 hours after the form and deposit. After booking, 12 hours before the visit. On booked days: replies within 1 hour(s), 09:00–18:00 JST. Outside these hours, by the next 10:00 JST. Early-morning messages are due that same morning.
When I begin a new arrangement with a restaurant or another third party, I’ll let you know and give you a fresh reply deadline. Follow-ups and waiting do not restart the clock.
